We have an exciting opportunity for a chef to join our young team for the Kimberley cruising season of 2024 (March to December).
Lady M Luxury cruises is a luxury small group charter business that offers live-a-board cruises from Broome, Darwin and the Rowley Shoals. Onboard the “Lady M”, we accommodate up to 14 guests cruising the remote Kimberley coast. This is an incredibly exciting and rewarding role with waterfalls, fishing, freshwater swimming holes and ancient Indigenous art on your doorstep.
JOB SCOPE:
The chef plays an integral role in any cruising expedition. Being able to work independently as well as a team member of our company is highly important. Working efficiently and professionally, you will need to create 5-star meals with presentation and guest dietary requirements in mind. You will be required to manage vessel stores forward planning for up to a month at a time. Individualism, innovation, passion for food and creating memorable experiences are essential to the overall cruising experience.
KEY DUTIES & RESPONSIBILITIES:
- Report to the Vessel Master/ Owners
- Excellent communication skills, personality and liaising with guests as well as the whole team
- Preparation of all meals to the highest standard for 14 guests and 6 crew members (crew eat the same as guests)
- Responsible daily for: breakfast, morning tea, lunch, afternoon canapés, dinner and dessert
- Provide a variety of choices for each meal as well as cater for specific dietary requirements
- Ability to adapt and be creative with available stores provided for two weeks – as there are no supermarkets along the remote Kimberley coastline!
- Knowledge of dietary requirements
- Ordering of vessel stores and own menu planning
- Work in partnership with the Steward/ess
- Available during mealtimes to accommodate guest requirements
- Responsible for all kitchen & dining areas
- Be able to work flexible/long hours
- Keep galley, storage, fridges and freezers clean
- Clean & maintain company equipment to the highest standards
- Support the vessel master and other crew members
- An ability to work and live in a small ship environment
- Be actively involved with the daily running of the vessel, ensuring that the comfort and safety of all persons aboard are maintained at very high standards
- Attention to detail and strong organisational skills with the ability to give directions to guests in the event of an emergency.
- Ensure that all work complies within company policy and procedures including OH&S and any legislative requirements.
QUALIFICATIONS REQUIRED:
- Qualified Chef – 2 years minimum experience
- Fine dining experience
- Ability to assist with all aspects of galley management
- Senior 1st aid
- National Police Clearance
- Current responsible services of alcohol (RSA) certificate
- COVID Safe training
DESIRABLE SKILLS:
- Previous employment as a chef on-board another vessel
- Hospitality experience is preferred
- Local knowledge is preferred, but not essential with onboard training provided.
EMPLOYMENT CONDITIONS:
You will be required to work a set roster throughout the season (March to December). This may vary from time to time depending on the vessel itinerary.
This is a remote role, where you will be living and working onboard Lady M for weeks at a time. As such, please consider the reality of working in a remote location for an extended period of time.
We are unable to offer re-location fees or housing.
