Our 26m luxury catamaran, MV Great Escape, explores the most remote, pristine destinations in Australia’s far North West, including the Kimberley Coast and the Rowley Shoals, in absolute style and luxury.  The local Broome owner-operator skippers of The Great Escape show our 14 guests who are on their “holiday of a lifetime” the secrets and hidden treasures of this awe-inspiring region. This is your opportunity to showcase your culinary talents as our onboard chef & join a professional crew aboard a stylish 14 berth vessel.

YOUR ROLE

As part of a crew of 7, the chef is instrumental in delivering fresh, quality, creative cuisine (including freshly caught seafood) to our 14 guests and 7 crew onboard.  This includes breakfast, morning tea, lunch, dinner entrée, dinner main and dinner dessert every day.  You also need to keep the galley clean tidy and well organised.  You will also be encouraged to organise your day efficiently to enable off vessel excursions with guests, preparation of picnics etc.

ESSENTIAL SELECTION CRITERIA

To be considered for this position, it is essential that you:

  1. Are proficient in all kitchen operations from preparation through to cooking and presentation of all meals.
  2. Be able to present recent photographs and descriptions of past dishes you have created. 
  3. Have a passion for high-quality food and presentation.
  4. Be proficient in ordering and stock control.
  5. Be blessed with patience and excellent communication skills to liaise directly with crew and guests. 
  6. Understand that your role involves working in a remote environment and all crew help each other out with shared duties. 
  7. Above all be a genuine team player with a professional work ethic.
  8. Have a passion for preparing and cooking fresh seafood (Barramundi, Mangrove Jack, Mudcrabs etc).
  9. Have a trade certificate or appropriate experience in a high end / popular eatery or onboard a luxury vessel as a chef.

DUTIES & RESPONSIBILITIES

  • Reporting to Skipper and Management Team.
  • Menu planning
  • Food ordering & stock control in a remote environment
  • Cooking mouth-watering, gourmet meals
  • Creativity and patience when tackling guest food allergies and specific guest requirements
  • Ensuring galley is kept clean, orderly and to all health requirements
  • Assist with land and water-based excursions as required by the skipper or First Mate
  • Loading stores and equipment onto the vessel
  • Greet all tenders arriving at the boat and assist with guests on and off
  • Other duties as required

QUALIFICATIONS REQUIRED

  • Qualified Chef.
  • Responsible Service of Alcohol (RSA) WA.
  • Senior First Aid (or willingness to obtain).
  • National Police Clearance.

EMPLOYMENT CONDITIONS

  • You will be required to work a set roster of approximately 4 weeks on / two weeks off. This may vary from time to time depending on the vessel itinerary.

SALARY / REMUNERATION

  • Competitive rate commensurate with experience.
  • Broome accommodation available.

  • Start in Broome 4th July 2024.
